Ripe peaches are fragile and do not travel well far from home. Once harvested, peaches do not ripen, and cold storage, as anyone who has been disappointed by a supermarket peach knows, results in a woody texture. With its hot, dry days and cool nights, Palisade, Colorado, grows some of the best fruit in America. Of its bounty of summer fruit, it is most famous for the “Palisade Peach.” Only the highest quality, most flavorful peaches go into our Colorado Mountain Peach Jam.
